Monday, monday... lala.. la.. lala lala

My goal for this week is to use up everything in my freezer. With Thanksgiving only three weeks and four days away (yes it really is!) I need to clear some space. My refrigerator is pathetically small thanks to the dunderhead who designed my kitchen. When we moved here our traditional style side by side refrigerator blocked the door of the pantry. The refrigerator that replaced it is "counter depth" and cost a whole lot more for the delightful feature of having less space! Now I'm toying with the idea of buying a very cheap refrigerator to put out in my garage. We have a perfect spot right next to the door from the kitchen so it wouldn't be a ridiculous trek out to gather stuff from there. It feels a little wasteful to have two refrigerators but right now I'm wasting time and money running to the grocery store three times a week simply because my fridge is too small to hold enough fresh food. Anyway... on to the menu!

  • Monday - Pasta Alfredo, Garlic Shrimp, Salad

  • Tuesday - Thai Peanut Chicken with Broccoli and Rice Noodles (we skipped this last week so I'll try again)

  • Wednesday - Slow cooker Beef Stew

  • Thursday - Chicken Tomatillo Enchiladas

  • Friday - Turkey Burgers, Potato chips, Salad

  • Saturday - Bob Cooks Something Delicious

  • Sunday - Soup and Panini (this is becoming a Sunday tradition

Thanks to Laura at for hosting Menu Plan Monday every week. If you haven't seen her new blog go check it out!

Oh, I must check out that site. I am so bad at that even more so since I've been at home.

We recently changed to a counter depth fridge and I LOVE it because I can see everything. Granted, I can barely store anything in the freezer, but we do have a larger one in the basement.

Before I had things buried in the back of the fridge, about 10 science experiments on the go at any time. "House of expired goods jr." is our nickname inherited from my parents' household.

Karen, I have been terrible about meal planning for years. I have tried planning in the past and it didn't work well because Bob would decide he wanted something different halfway through the day and stop at the store to buy it on the way home. However, now that our menu is posted on the blog he seems to respect it more. Perhaps because he has instant access to it so he can check it instead of dreaming about what he wants. Or maybe it's just the novelty. This is our fifth week of planning.

What brand of counter-depth fridge do you have? I think part of my problem with this one is that it is difficult for me to organize my ever growing collection of sauce/dressing/condiment bottles. I have always kept them on the door and now they are taking up a whole shelf. Hmm.. maybe the problem isn't the fridge?

I love the "house of expired goods" tag!

Hi there Gina! Thanks for visiting my blog the other day.

Your menu sounds delicious. I love Thai--yum! I try to use my crock pot at least once a week too--isn't it great!!!

Have a great rest of the week. And Boo!
